EDITORIAL APPROACH

Show the formula. Explain the assumptions.

Our calculation and editorial approach, published October 28, 2026.

What our notes are

Our notes are original explanatory guides with worked arithmetic, diagrams and references to relevant primary sources. They are not recipe testing reports, product reviews or evidence of professional baking experience.

How the tools calculate

Recipe scaling uses one yield factor for each ingredient mass. Pan comparison uses total bottom area and assumes similar intended batter depth. Baker’s percentages use combined flour mass as the 100% basis. Displayed values round to two decimals while the calculations retain unrounded inputs.

Ingredient and unit distinctions

Weight ounces are different from fluid ounces. Volume-to-mass conversion depends on the ingredient; the tools do not assign one density to all ingredients. A total formula mass is different from finished baked weight.

Sources and updates

Sources appear at the end of each note. Their inclusion does not mean a source has tested or endorsed this site. Publication dates reflect this first release and will only change when the relevant content is revised.
